- Plucking

- Withering
Freshly picked leaves are spread thinly under sunlight or in a well-ventilated area indoors to wither. This reduces their moisture content, softens the leaves, and prepares them for rolling and fermentation. Withering also begins to activate the tea's aroma.
- Tossing
Tossing is a critical process in oolong tea production and a key source of its distinctive aroma. Withered tea leaves are shaken in bamboo trays or rolling cages to create friction between the leaves, breaking some cells and initiating partial oxidation. This step causes the leaf edges to bruise, releasing enzymes and polyphenols, and promoting controlled oxidation. Tossing is followed by a resting period of 1.5 to 2 hours per round, and typically five to six rounds are needed to achieve the desired aroma and flavor. This process demands meticulous attention and often requires overnight work, where the skill of the tea master is paramount.
